Fun fact, I adore baking but I prefer savoury food over sweet most of the time. I suppose what lures me to baking is simply the joy it brings others, who wouldn’t smile when presented with this mini Bailey’s cheesecake with DIY heart cupcake topper? If you are planning on spending Valentine’s day at home this would make for the perfect dessert to celebrate the evening.
DIY HEART CUPCAKE TOPPER
- Red glitter cardstock
- Hot glue gun
On the back of the sheet of red cardstock draw one small heart with a pencil and cut it out. Using the cut out heart as a tracer, trace the same heart shape over and over again so that you have double the amount of trace hearts to the amount of cupcake toppers you need. For example if you are only going to need 2 cupcake toppers you need 4 hearts.
Place a small amount of hot glue on bottom of the back of one of the cut hearts and position a toothpick onto the glue. Next place another cut heart directly on top of the first heart with the glitter side up. This way you will have the glitter heart on either side of the cupcake topper.
MINI BAILEYS CHEESECAKE
- 125 grams cream cheese (room temperature)
- 2 tbs brown sugar
- 1 egg
- 2 tbs Baileys liqueur
- cocoa powder
Preheat oven to 150°C. Fill the bottom of either a greased muffin pans or extra mini springform pans with pre-cooked chocolate or chocolate torte cut to cover the entire base of the pan and be around 3 to 5 mm thick.
Combine cream cheese and sugar and using a electronic mixture mix until light and fluffy. Add the egg and Baileys and mix until fully combined with sugar and cream cheese.
Add the cheesecake mixture over the cake base and bake for 12-15 minutes or until set.
Remove from the oven and allow to fully cool before removing from the pan and dust with cocoa powder to serve.
